Our Pinot Noir is a pale raspberry beauty with a delicate, red nose that exudes the charm of floral roses, red apple, and a hint of cherry wood baking spice. Its dry profile gracefully restrains acidity, giving rise to flavors of rose petal, raspberry, and a touch of white pepper. The finish is long and lingering, with gentle tannins.
We employ hand-picking techniques, destemming some grapes, and relying on wild fermentation to bring out the true character of the fruit. Our commitment to clean fruit and cooler fermentation for enhanced aromatics is our secret. Through a gravity flow process, our wine matures in old oak barrels with the aim of creating an old-world Pinot that stands out from the crowd.
