Our Syrah comes from our 5-acre vineyard in St. David’s, with an average yield of 5 tons per acre. Our dedicated team hand-picks the fruit, and we remove the stems to ensure top quality. The whole lot rests in a single, brand-new 500 L American-oak puncheon, with just enough wood to frame the wine. When the time’s right, we let gravity do the bottling, and run only a whisper of filtration so every drop keeps its edge. A true labour of love, and one we’re very proud of.
Cracked pepper, blackberry compote, and dried fig ride a swirl of cardamom and wild herbs. Medium-bodied with lively acidity, it rolls from sweet dark fruit up front to a dry, desert-sage finish. Fire up the grill! Lamb skewers, smoked brisket, or charred eggplant are this Syrah’s happy place.
